Mimi's Mac N Cheese Casserole



Ingredients
  • 4 cups water 
  • 7 ounces uncooked whole grain macaroni noodles
  • 1  tablespoon olive oil
  • 2 tablespoons 100% whole wheat flour
  • 2 cups 2% milk
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon dried basil
  • 8 ounces 2% Four-Cheese Mexican Blend Cheese
  • 5 pieces Whole Grain Melba Toast, crushed

Preparation


Preheat oven to 350 degrees. Spray a 9x13 baking pan with non-stick spray.

Put water in large sauce pan and bring to a full boil. Add the macaroni and cook on high for 10 minutes (or until al dente), stirring occasionally. Drain macaroni.

In the meantime, heat the oil in a large skillet (or smaller saucepan) over medium heat. Add the flour, milk, and spices. Stir well to combine and mixture thickens. Add the shredded cheese. Reduce heat to low and cook until cheese is melted.

Combine cooked macaroni with the cheese mixture. Pour mac and cheese into the prepared baking dish. Sprinkle the crushed melba toast over the top.

Bake for 30 minutes. Makes 4 cups
