One Pan Turkey and Potato Dinner

One Pan Turkey and Potato Dinner

Ingredients
  • 3 pounds ground turkey *
  • 1 1/2 cups oatmeal
  • 1 large onion, chopped
  • 3 eggs
  • 1 1/2 teaspoon fennel seed
  • 1 1/2 teaspoon dried basil
  • 1 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 5 pounds potatoes, peeled and cut in half (or you can adjust the amount to your liking)
  • 1 teaspoon winter savory
  • 1 cup ketchup
  • 1 cup water

Preparation

Preheat oven to 375 degrees. Spray a 9x13 pan with non-stick spray.

In a large mixing bowl add the ground turkey, oatmeal, chopped onion, eggs and spices (except for the winter savory). Mix all ingredients until thoroughly combined. Place the meat mixture in the center of the baking pan and shape it into a loaf. Arrange the potatoes around the meat loaf. Sprinkle the winter savory over the potatoes. Spread 1/2 cup ketchup over the top of the meatloaf. Mix the remaining 1/2 cup ketchup with the water and pour over the potatoes.

Bake, uncovered, in the preheated oven for 90 minutes or until the meat loaf is cooked through.

We like to make more because we enjoy leftovers.

* I used open-range turkey and, I must admit, this was the best turkey meatloaf I have ever made!
