Ingredients
- 6 ripe bananas
- 2/3 cup unsweetened applesauce
- 1/2 cup natural peanut butter
- 1/3 cup unsweetened coconut milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 2/3 cup unsweetened cocoa powder
- 1 tablespoon coconut flakes
- 4 1/2 cups old fashioned oats
- 1 cup dark chocolate chips
- 1 cup raisins
Preparation:
Preheat oven to 350 degrees.
Place the bananas, applesauce, peanut butter, unsweetened coconut milk, vanilla, cinnamon, salt and cocoa in the Vitamix. (Mixer will work if you do not have a Vitamix). Mix until well blended. Pour banana mixture into a large bowl. Add the coconut flakes and oats. Mix until oats are all coated with banana mixture. Stir in chocolate chips and raisins.
Drop by well rounded teaspoon onto an ungreased cookie sheet.
Bake 11 - 12 minutes.
Makes 4 - 5 dozen
